I developed my love of food and cooking when I was a young girl foods-recipes.com. My mother was an amazing cook. Some of my fondest memories are of being in the kitchen with my mom learning how to cook our favorite family meals. I hope to pass that love of cooking to my daughters. I have one teenage daughter who is particularly fond of being in the kitchen, so when I saw this recipe for simple Green Chili Enchiladas, I knew that it would be one that she could tackle on her own.
To make the process simple, I prepared the chicken for her. Rather than starting with raw chicken, we used leftover meat we had from a store-bought rotisserie chicken the night before. I pulled the meat from the bones, discarding the skin and fat. Doing this ahead of time not only cut down on prep time, but it also helped cut down on the mess—a big plus for weeknight meals.
She gathered all the ingredients to make assembly simple. My daughter used corn tortillas rather than flour to make the dish gluten-free. She mixed the chicken, chili, cheese and salsa in a sauté pan until the cheese was melted. After tasting it, she added a dash of salt and pepper to punch up the seasoning.
To assemble, she simply heated up the corn tortillas in the microwave for about thirty seconds so they became pliable and easy to work with. She spooned a generous heap of the chicken mixture onto each tortilla and placed them seam side down. She rolled enough to fit a 13×9-inch baking pan and baked according to the recipe instructions.
The result was a tasty meal that was ready in about 30 minutes. The enchiladas were a hit with the whole family. My husband slathered them with some hot sauce to make them extra spicy, while the rest of the family topped them with a generous dollop of sour cream. The recipe is easy enough for kids to make on their own and the flavor profile is easily adjusted, giving them some room to experiment with flavors. My daughter mentioned that next time around she would like to add some garlic powder and maybe some spicy chili powder to kick up the flavor a little. It’s great seeing her step out and experiment with flavors, and we look forward to having the dish again.
